The week before
Dig out something from early on — old photos, first messages, the ticket stub, the playlist. It takes twenty minutes and it's the entire difference between this and any other expensive dinner.

Recreate an early one — the kind of place you went when you had less money, not more
Go somewhere that echoes the beginning rather than somewhere that signals success. The callback does more work than the upgrade.
The bit that matters: Order what you ordered then, if you can remember. If you can't, that's a good conversation on its own.

Anywhere you can sit and go through things on a phone or on paper
Go through what you dug out. Photos, messages, whatever it was.
The bit that matters: Each name one thing the other person does now that they didn't do then. Not a compliment — an observation. It's a much better toast than "to us."

Say the year ahead thing. One thing each you want to be different by the next one.
The bit that matters: Keep it small and specific enough to actually happen. "Travel more" is a wish; "one weekend away every three months" is a plan.
What to eat
The callback matters more than the price. Where you went when neither of you could afford it beats the place you can afford now.
